This is exactly what it sounds like - the foot of a chicken. A chicken's foot consists of skin, cartilage, tendons, and bones. There is no meat but lots of collagen.

Chicken feet are great slowly cooked in water for a long period of time to break down all that collagen. This creates a super gelatinous and flavorful broth. We like to add them to a chicken broth along with vegetables, herbs, and spices to create the richest, fullest chicken broth possible.
